Rosso IGP of the Province of Pavia Vintage – Sfogliata

Homer’s epic poems hand us down the memory and identity of his civilization. In the same way, our Omero brings on your table the value of the tradition. It makes you feel the warmth of passion and dedication in producing it, the scents and beauty of our hill.
Omero is obtained with 45% of Croatina grapes, 35% Barbera, 15% Merlot and 5% Uva Rara. Grapes are scrupulously chosen and harvested by hand; the must ferments for about five days on marcs before tapping. The wine is then aged in tank for at least 12 months.
Omero has an intense ruby red color, a very personal, penetrating bouquet, with hints of red fruits, ripe cherries and a fine balsamic vein. It has a fruity, harmonious, elegant, well-balanced flavor, with a long and pleasant persistence.
It accompanies all dishes, even the most demanding ones based on meat, as well as important aged cheeses.
We suggest to drink Omero at a temperature of 18° – 20° C (64° – 68° F).

Carlo Magno
Rosso IGP of the Province of Pavia Vintage – Sfogliata

Carlo Magno is obtained with 60% of Barbera grapes, 30% of Croatina grapes and 10% of Uva Rara grapes that come from one of the best vineyards of the hillside, so it’s placed among refined wines.
Microclimate features of the vineyard, suckering and thinning out of the grapes, made Carlo Magno so special.
Precious grapes are harvested by hand and immediately pressed; in the barrels the must ferments naturally on the peels for about five days. After our everyday control, we decide for the racking to obtain a great bodyed, dry and balanced wine.
Carlo Magno has an intense ruby red color; the fine bouquet of ripe berries gives way to hints of dried or cooked red fruit. The taste is warm, soft, structured and persistent.
Carlo Magno is a red wine having a strong personality. It accompanies demanding dishes based on meat and furry game, as well as the best aged cheeses.
A serving temperature of 18°-20°C (64° – 68° F) best enhances its qualities.

Di Cosimo
Merlot IGP of the Province of Pavia Vintage – Sfogliata

Di Cosimo is an important wine, first produced in 2020, a hundred years after the founding of the winery by great-grandfather Davide.
Davide was the son “of Cosimo” (“Di Cosimo”), a form used in Italy many years ago instead of their surname.
Di Cosimo is made from grapes of Merlot 85% and Croatina 15%, selected and carefully handpicked.
The wine has a brilliant red ruby color, its aroma is enveloping, of red fruits with hints of grassy spices. The taste is warm, velvety and persistent.
Di Cosimo pairs elegantly with creamy first courses, white and red meat escalopes and the best fresh cheeses.
A serving temperature of 18°- 20° C (64° – 68° F) best enhances its peculiarities.

Prosit
Croatina IGP of the Province of Pavia Vintage – Sfogliata

The best Croatina grapes handpicked in Sfogliata, in a winning blend with 15% of fine Merlot: this is the prestigious Prosit.
Its Latin name means “may it be propitious to you” and it recalls the best wish among diners during friendly toasts.
Intense ruby red in color, it offers a complex bouquet of red fruits which prepares for a smooth, harmonious and persistent flavor.
It gracefully accompanies even demanding first courses, tasty second courses especially of meat, cold cuts and mature cheeses.
Serve at a temperature of 18°- 20° C (64° – 68° F) to better appreciate its character.

Ri…Sorsi
Bonarda Oltrepò Pavese DOP Vintage – Sfogliata

Risorsi in the Italian language reminds us something that “rises again” but, at the same time, the word also means to re-sip wine.
It is obtained with 90% of Croatina grapes and 10% of Barbera and Uva Rara grapes, harvested by hand with careful selection and immediately crushed; they are left to ferment naturally into the barrels for about five days, as long as the juice is drawn off.
Our Ri…Sorsi, Bonarda dell’Oltrepò Pavese, has a brilliant, intense and consistent ruby red colour.
The aroma is broad, intense, with strong reference to the more mature berries of our countryside. The taste is soft, full-bodied, harmonious and persistent.
Ri…Sorsi is ideal to accompany any meal, from all servings of pasta to even elaborate second courses, especially with meat.
Also try it as a starter with salamis from the Oltrepò Pavese and of the surrounding areas; it is also ideal with hard cheeses.
Serve at a temperature of 16-18 °C (60° – 64° F).

Aur’è
Riesling IGP of the province of Pavia – Sfogliata

Aur’è comes from 100% of Riesling Italico grapes from a vineyard located on the crest of our hill, always kissed by the sun and caressed by a gentle cool breeze. Its name in the Italian language reminds both
such light wind, and the golden colour of ripe Riesling berries.
The grapes are picked by hand with careful selection, immediately crushed in order to obtain the grape must in fermentation separately from the pomace.
Our Riesling Aur…è presents a straw, crystal clear colour.
It has an intense aroma, fruity hints of peach and of white-fleshed plum.
The taste is dry, fresh, and palatable.
Aur…è (Aur …is) is a perfect accompaniment for light main courses, rice dishes as well as for second courses with fish and white meat. Ideal to sip before dinner with a few snacks.
Serve at 6-8 ° C(42-46° F).

Perla Rosa
Pinot Noir vinified in rose IGP of the province of Pavia – Sfogliata

Obtained by pure Pinot Noir grapes vinified in rose, Perla Rosa is a precious wine at Sfogliata. The restrained yeld of the grapevines and the careful selection of grapes, harvested by hand and fresh pressed, ensure to the prodouct that arrives in the cellar a great quality. After the pressing, the must lays all night long on the peelings from which it gains its colour. Early in the mornig we separate must from marc. The fermentation goes on at a cecked temperature to keep the freshness of its fragrance. When refined, a fine blueberry, raspberry and pomegranate scent prepares to his fresh, sapid and persistent flavour.
Perla Rosa nicely combines with appetizers, vegetable seasoned first dishes and fleshy fishes.
Served at a 10°C (50° F) temperature Perla Rosa best combines his qualities.

Roboris
Rosso IGP of the Province of Pavia – Sfogliata

Roboris is obtained from Barbera and Croatina grapes, harvested by hand and pressed on the same day. The must ferments naturally on the marc for five days until tapping.
Its bright ruby red color and intense fruity bouquet prepare for its delicate, smooth and persistent flavor.
Roboris is a perfect wine for the whole meal. It can be matched with elaborated first courses, with main courses especially of meat and it is excellent with cheese and cold cuts.
We suggest serving Roboris at a temperature of 18°C (64°F).

Rubiconda
Croatina IGP of the province of Pavia – Sfogliata

Rubiconda has a brilliant ruby red colour.
The aroma is broad, with notes of red berried fruits. The taste is soft, full-bodied, harmonious and persistent.
Rubiconda is ideal to accompany any meal, from all servings of pasta to even elaborate second courses, especially with meat.
Rubiconda is great also with salamis and hard cheeses.
Serve at a temperature of 16-18 ° C (60° – 64° F).

Moscato
Moscato IGP of the province of Pavia – Sfogliata

This wine is born from the traditional winemaking of Moscato’s grapes. Straw colour, fragrant and fruity smell with strong Moscato’s grapes scent. It’s perfect with every kind of dessert.
Serve at a 6-8°C (42-46° F) temperature.
